Roasted Asparagus on the Food Network

Saw this on the Food Network.  Thankfully, my children love asparagus.  One of those healthy foods that go along with most meats and starches.  Slivers of almonds do well sprinkled on top.  Very simple recipe.

Olive Oil is great to use with the recipe...very healthy.  The network has a lot of those videos that make cooking their recipes fun to cook.  The link is included, plus you can create your own recipe box on their site.  Be sure to check it out.

Directions

Toss 2 pounds trimmed asparagus, 1 tablespoon olive oil, and salt and pepperon a baking sheet. Roast at 450 degrees F until lightly browned, 15 minutes. Mix 1/3 cup toasted pine nuts, 1/2 cup chopped parsley, the grated zest of 1 lemon, and salt and pepper. Sprinkle over the asparagus.
